Ingredients
- 1 tablespoon cooking oil
- 1 pound Beef round or chuck, cut into 1-inch cubes
- 14- 1/2 ounce can whole peeled tomatoes
- 10- 1/2 ounce can whole kernel corn, drained
- 4 ounce can diced green chiles
- 1 1/2 cup beef broth
- 1 large Onion, chopped
- 4 cloves garlic, chopped
- 2 teaspoon dried oregano
- 1/2 cup chopped fresh parsley
- 8 crushed juniper berries
Directions
Heat oil in Dutch oven until hot. Brown Beef in oil. Add remaining ingredients. Bring to a boil. Reduce heat and cover. Simmer 1- 1/2 hours or until Beef is tender. Add water if necessary.
