The Korean appetizers include: rice, lots of eggs, tofu, flour for the dough and various kinds of meat, beef and pork being the most common. Among the most famous appetizers there are the pajuns (hae-mool pajun) and the juns (gogi wan-ja jun and kimchi jun), the pajun is made of a base and a dressing. The base includes flour, water, eggs and a lot of seafood including clams and oysters. The dressing is made of soy sauce, powdered red pepper, vinegar and crushed garlic, onion and sugar. Jun is the name for all the dishes fried in an egg batter. Gogi wan-ja jun includes tofu, beef or pork, eggs, chopped green onions, crushed garlic and sesame, fried in vegetable oil. The Kimchi jun is made of head kimchi, leeks, eggs and flour. Sugar is an ever present element in Korean appetizers, since sweet and salty meals are Korean favorites.
